Just bought a smoker!

We have a Gas and charcoal BBQs, and a propane Pizza oven already. We now have ordered a digital electric smoker. Why? Because it is so easy to make unbelievable salmon for appetizers and main courses. For appetizers, I provide a pretty strong backing of smoke since it going to be used for small limited servings. For a main course, I lightly smoke, at low temp to an internal temp of 118F. You aren't going to get this level of perfection in a restaurant. Of course, this smoker can be used for other things like pork and beef. Slow cooked/smoked anything is going to be great, and this smoker is electric and programable so it is incredibly easy to use. Once I get it set up, I'll be posting some recipes.
